Spinach Corn Rice with Exotic Gravy – by Anu Kamra

  • 1 cup boiled rice ( by adding little salt, pinch of oil and star anice)
  • 2 bunch spinach made into puree 
  • 3 tbsp oil
  • 1 tbsp butter 
  • 1 tsp cumin seeds 
  • 1 tsp garlic chopped 
  • 2 small onions chopped 
  • 1 cup corn
  • Salt to taste 
  • 1 tsp dhaniya powder 
  • 1/2 tsp black pepper powder 
  • 1/4 tsp turmeric powder 
  • 1/2 tsp paprika
  • Some coriander leaves 


  1. Boil the rice with little salt, little oil and 1 star anise.
  2. Once the rice r cooked keep them aside.
  3. Now make puree of spinach by washing it properly and then blanch it for 3-4 minutes and then refresh it under cold water and squeeze the water properly and then by adding a ginger piece and 2 green chilli make a purée on mixer grinder.
  4. Take 3 tbsp oil in a wok and also add 1 tbsp butter.
  5. Once butter melt, add cumin seeds and allow to crackle.
  6. Once the cumin seeds crackle, add chopped garlic and sauté it for a while.
  7. Now add chopped onions and sauté it well till translucent.
  8. Now add corn and stir it well , soon the corn will bloom and enlarge in size as it gets sautéed.
  9. Now add salt, black pepper powder, turmeric powder, Dhaniya powder and paprika and mix everything well.
  10. Now add coriander leaves and mix it well which will impart beautiful aroma and taste to our rice.
  11. Finally add boiled rice and drizzle some water and cover the pan for 2-3 minutes till steam is developed and all spices gives beautiful aroma to our rice.
  12. Now our spinach corn rice ready.

Exotic Gravy


  • 2-3 tbsp butter 
  • 1 tsp garlic 
  • 1/2 tsp chilli flakes 
  • 1 tbsp maida or all purpose flour 
  • Mix veggies like blanched broccoli florets, some corn , red bell pepper ( instead of carrot) and paneer ( instead of mushrooms) 
  • Salt to taste 
  • 1/2 tsp black pepper powder 
  • 1/2 tsp paprika 
  • 1 cup milk 
  • 1 cube grated cheese


  1. Take a wok. Add butter in it .
  2. Add garlic and sauté it .
  3. Add 1/2 tsp chilli flakes and sauté well on low flame.
  4. Add 1 tbsp Maida And keep stirring to prevent any lumps.
  5. Now add broccoli, corn, red bell peppers and paneer and stir well and eventually our veggies r coated with maida mixture.
  6. Don’t overtook the vegetables.
  7. Now add all seasonings and mix well.
  8. Now add 1 cup milk in batches as per required consistency of our creamy gravy.
  9. Soon beautiful aroma and nice lovely texture of our delicious creamy gravy will be developed.
  10. Add grated cheese and just give 1 boil to our gravy.
  11. Our delicious Exotic creamy gravy is ready to be served with spinach corn rice.
