Rajasthani Traditional Dish Garlic Kheer – by Bindiya bhagnani


Garlic Kheer

Preparation time :- 10 minute’s

Cooking time -20 minutes

Total time – 30 minute 

Serving -2


  • 1/2 litter milk
  • 20 to 22 garlic cloves (cut in long thin strips )
  • 1/2 cup sugar
  • 3 tsp vinegar 
  • 1/2 tsp cardamom powder
  • 1/4 cup milk powder
  • 1/4 cup milk
  • 1/2 tsp kesar thread
  • 2 tbsp mix chopped dry fruits 


  1. First, heat clay pot  or a pan add milk and boil it. 
  2. Take a bowl add 1/4 cup milk and kesar. And keep it aside. 
  3. Now heat an another pan  put 1 cup of water, garlic   and 1 tsp vinegar in a pan and let it boil for 5 to 6 min. 
  4. After 6 minutes,  strain it and wash with cold water.
  5. Again  put 1 cup of fresh water in a pan add strain garlic and 1 tsp of vinegar, put it to a boil for 5 to 6 min. Again strain it. (Repeat this process 3 times.) So that garlic fragrance and punginess get remove.
  6. Now Finally wash the garlic once with cold water. So that Vinegar taste and fragrance is completely removed.
  7. Stir the milk continuously when the milk reduce add Cardamom powder and Milk Powder mix well.
  8. Now add garlic, mix well and cook it for 5 to 10 minute’s . Then add kesar milk and  sugar, Dry fruits into milk and mix.  cook on medium heat for 5 to 10 minutes, or  kheer is thick. Keep stirring the kheer.
  9. When the kheer becomes thick, then turn off the gas and  sprinkle some dry fruit over it. 
  10. Garlic Kheer is ready. You can Enjoy it hot or cold

  1. Garlic kheer is a Traditional sweet dish of Rajasthan which is made during the time of Mughal and Raja.
  2. This Rajasthani traditional and nutritious kheer has many benefits. Its good to have in winter. It’s  beneficial for  join pain, cold, acidity and many disease.
  3. My addition in this kheer I added milk powder to get more richness and kesar to give beautiful colour and aroma.
  4. You can also make this Kheer without sugar, for this, you can grind 1/2 cup dates with milk and then put it to a boil. You can also make this Kheer by adding dry fruits and milk mawa as per your choice.

Key points

  1. Boil Garlic in vinegar so that taste and fragrance reduce and after 3 time boil the garlic change into almond mean no fragrance of garlic and punginess of garlic remove.
  2. When you add garlic in milk after boil wash it properly with fresh water so that vinegar will remove properly otherwise your milk will curdle.
  3. You can serve it hot or cold .Or you have it after dinner as a dessert.
