Greeny Muffin’s with Coconut Icing – by Bindiya bhagnani

My innovative Healthy recipe is Greeny muffins with coconut icing which is full of Nutritious and vitamins .

Spinach full of vitamins .It’s also have many benefits like gud for skin and hair , best for eye sight 

Here this Healthy Sprouts  Greeny Muffin’s are best in not only taste but healthy too for our health . 

Greeny Muffin’s with Coconut Icing 

Ingredients

  • 1 cup sprouted moong
  • 1/2 Cup Spinach
  • 3 to 4 Garlic Buds
  • 2 green chilli
  • 2 tablespoon gram flour (besan)
  • 1/2 teaspoon fruit salt
  • 1 tsp Lemon Juice
  • Catch salt as require
  • 2 tablespoon refined oil

For Muffin Tempering

  • 1 tbsp oil
  • 1/2 tsp mustered seeds
  • 1/2 tsp sesame seeds

Coconut Icing

  • 1 cup coconut
  • 2 tbsp Curd
  • Catch Salt as Required

For Coconut Icing Tempering

  • 1 tbsp oil
  • 2 Red Chilli
  • 1 Green chilli chopped
  • 5 to 6 curry leaves
  • 1/2 tsp sesame seeds
  • 1/2 tsp mustered seeds

Method

For Muffin

  1. Firstly In a Mixer jar add sprouted moong, Spinach, garlic,  green chillies,  together add 2 tbsp water  and grind them to make a fine paste.
  2. Now, take a bowl and add the grinded mixture into it. Add salt,lemon juice, Gram flour,  along with the required amount of water. Whisk them well to make a thick batter.
  3. Then add fruit salt  Mix them well.
  4. Now greese the Heart Shape Muffin Mould with oil. Put the batter into a Muffin Mould and steam for about 15 minutes till it is completely cooked.
  5. After 15 min insert a toothpick and check it for doneness. If it is sticking to the toothpick, then cook it for 2-3 minutes more.
  6. Once cooked, allow the Muffin to cool down for few minutes then de mould it .

Savoury Muffin is ready..

For Muffin Tempering

Heat oil in a small pan over medium heat. Add mustard seeds, sesame seeds,  once seeds crackle, Pour this tempering over the Savoury Muffins.

For Coconut Icing

Take a mixer jar add coconut, curd, salt as Required and make a fine paste. Now Spread this coconut Icing on Muffins.

For Icing Tempering

Heat oil in a small pan over medium heat. Add  sesame seeds,  mustard seeds, once seeds crackle, add curry leaves, green chilies. Sauté for few seconds mix well. Pour this tempering over the  Icing.
